For The Cookies
- 1/2 cup coconut oil
- 1 cup coconut sugar
- 1/4 cup of non-dairy Milk
- splash of vanilla
- 2 1/4 cup of plant-based flour of choice ( I used 1 3/4 cup of coconut flour and 1/2 cup of almond flour)
- 1 tbsp of cornstarch ( for the fluffiness )
- 2 tsp of baking powder
- 1 tsp of cinnamon
Preparing the spices
Preheat the oven to 180 degrees Celsius (360 Fahrenheit)
In a bowl mix the melted coconut oil and the coconut sugar until combined.
Add the rest of the ingredients and mix well. (You can mix them in a food processor)
Mix and Whizz until the dough begins to come together as a ball, it will be sticky.
Form the dough into small balls by hand based on the size you want your cookies to have.
Lay a sheet of baking paper on a baking tray, place the balls on it.
Use the bottom of a cup or your hand to flatten the dough balls, 0.5 cm thick.
You can coat them with cinnamon and/or coconut sugar if you want.
Bake for 10-12 minutes (I give a range as once it starts browning it browns fast) you just want the edges to be going brown)
